Frittata #1

I like frittatas.  I’ll try to make and post several variations of this delicious, satiating, high-fat dish.

Today, I started with a couple slices of bacon in the pan.  Then, I threw in green and red onions and some grass fed butter.  About 8 eggs, with a little black and white pepper, a touch of herbs de provence, and some sliced up uncured beef franks (sausage is certainly acceptable here; i’d have used it if I had any); whip up the egg mixture a bit, throw it in the pan when the onions have had a couple minutes:

Cook on medium high until mixture is cooked almost all the way through; a bit of runny egg on the surface is fine.  Sprinkle with cheese (I used a mixture of mozzarella and parmesan), and put under the broiler on high for 3-4 min:

Garnish with tomato & a bit of sour cream or crème fraiche; I also drizzled with Aardvark sauce.  Delicious!:
